Ryan Stringer | Executive Head Chef
Many of you will have experienced his delicious new dishes on our menu. Our forward-thinking Executive Head Chef has been at the helm since 2021 and has developed the menu, pushing the boundaries of taste, texture and flavour, earning him and his team many plaudits from the Top 100 restaurants in the 2023 Sunday Times McKenna's Guide of Irelands best restaurants to LCN Chef of the year. Ryan and the team focus on local, ethically sourced, sustainable produce enhanced by a wealth of international experience.

What are you watching on Netflix?
I am watching Disney Plus at the minute as Obi-Wan Kenobi has recently started, bit of a Star Wars fan.
How do you spend your days off?
My days off are spent having fun with my two boys and very new baby girl.

Paul Vaughan | Operations Manager
We want to introduce you to our Paul. With over 20 years of experience in hospitality, he is one of the best. Paul is responsible for the day-to-day operations of James St, his passion for food & wine is second to none, and we are extremely lucky to have him leading our JS team.
When Paul has a night off, you will find him with a cuppa tea somewhere, and there is nothing that comes between this man and tea. In his free time, he loves to escape the noise of the city and hit the hills of his homeland Donegal for some R&R.

Darrell O'Hanlon | Restaurant Manager
The friendly face at the head of our front-of-house team. With over 18 years of experience in hospitality, Darrell is responsible for service and ensuring our guests have the best time dining at James St and will be happy to guide you through anything menu related.
